The lemon is a small evergreen tree, native to Southern Asia , and lemon is also the name of the tree's small yellow oval fruit.
From the 10 th century, Arabs cultivated lemon trees all over the Mediterranean region but primarily in Spain . At the end of the 15 th century, the lemon tree was introduced into Florida by the Spanish and Portuguese.
Lemons have a high vitamin C content.

The main varieties of lemons are :

• Eureka : thin skin, seedless, very juicy fruit. This is the most cultivated variety all over the world, mainly in the Southern Hemisphere.
• Verna : deep yellow, thick skin; variety mainly cultivated in Spain .

What we name “ green lemon” is in reality a “lime”, whose main variety is “ Tahiti ”. This seedless fruit is more juicy than the lemon itself.
